Pineapple skin tea is a popular drink in Jamaica, where it’s served both hot and cold to aid digestion. A typical recipe for this tea contains pineapple skin, ginger, and sugar. I have adapted the recipe below to have a fall-inspired flavor with the addition of turmeric and maple syrup.

If you can find some pink pineapple, the drink will have a slightly sweeter, less tangy taste than regular pineapple. However, this pineapple skin tea recipe works perfectly well with any pineapple!

How to Make This Recipe

IMPORTANT: Before you go any further, you’re gonna want to wash your pineapple skin thoroughly. Scrub with a vegetable brush, or soak in vinegar for a half hour to remove any bacteria from the skin.

After thoroughly washing your pineapple skin, bring all listed ingredients to a boil for 30 minutes to an hour.

Drain, reserving the liquid for your tea. Now that the pineapple skin has fulfilled its purpose, it can be composted! Enjoy hot or cold.

  • You can adjust the flavor with extra sugar or maple syrup.
  • For a mulled pineapple skin tea version, add some orange peel, cloves and nutmeg.
  • You can save pineapple skin over time and freeze it. Once you have a large amount, you can make a big batch that will last you longer.

Store This Recipe

You can bottle the pineapple tea and chill it in the refrigerator for a week. Alternatively, you can seal and pasteurize the bottles, preserving it for even longer.

Ingredients

  • 1 pineapple, peel and core only
  • 1 knob ginger
  • ¼ tsp turmeric
  • 1 stick cinnamon
  • 1 tbsp maple syrup
  • 3 ½ cups water
