Vegan Pumpkin Pie

Ingredients

  • 1 premade pie crust
  • 1 16 oz pumpkin puree canned
  • 1 ΒΌ cup cashews soaked overnight
  • 1 cup maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Instructions

  • Combine all ingredients but the crust in a food processor. Add to pie shell and cook at 350F for 45 minutes until edges are a bit fluffy. Let cool and place in the fridge for 2 hours.
