1½cupchopped fruitstrawberries, blueberries, banana - choose one for each dumpling
8graham crackersfinely crushed - about 1/3 cup crumbs
4tbspnatural peanut butter
1-2tbsppowdered sugarfor serving
Instructions
Fill a shallow dish or plate with warm water. Dip one rice paper sheet into the water for about 10 seconds until soft and pliable, then transfer to a clean surface.
Sprinkle about 1 tablespoon of graham cracker crumbs in the center. Top with a few spoonfuls of chopped fruit and drizzle with about 1/2 tablespoon of peanut butter.
Fold the sides of the rice paper over the filling, then roll it up like a burrito to seal. Repeat with the remaining ingredients to make 10 dumplings.
Lightly spray each dumpling with oil and place in the air fryer basket in a single layer. Air fry at 400°F for 5 to 7 minutes, or until golden and crispy, flipping once halfway through if needed.
Dust with powdered sugar just before serving. Enjoy warm and gooey.
No air fryer? Pan fry until crispy on both sides or bake it in the oven, flipping halfway.
Use sunflower seed butter or pumpkin seed butter if you have a peanut allergy. You can also use a different nut butter (like almond or cashew) if your allergy does not include tree nuts.
Sub crushed cookies or granola for graham crackers if you want to add extra sweetness.
Add a few vegan chocolate chips before folding. I don't think I've ever regretted adding chocolate chips to anything!
