Equipment

  • Blender or Food Processor
  • Parchment or silicone sheet

Ingredients

  • 4 cups bread slightly stale or hard
  • 2 tsp dried parsley
  • 2 tsp nutritional yeast
  • ¾ tsp salt
  • 1 tsp extra virgin olive oil

Instructions

  • Preheat the oven to 375F and prepare a baking sheet. 
  • Tear the bread into bit sized pieces, and place it in a high speed blender or food processor. Blitz until a breadcrumb texture is formed. 
  • Transfer the bread crumbs to the baking sheet, and sprinkle on the dried parsley, nutritional yeast, salt and olive oil. Toss. 
  • Bake in the oven for 10 to 12 minutes, tossing halfway through. Breadcrumbs can burn easily so make sure to monitor them as they cook.
