Equipment

  • Small jar for the dressing
  • Large mixing bowl

Ingredients

  • 1 head butter lettuce finely chopped
  • 1 large handful dill diced
  • 1 large handful parsley diced
  • 1 bunch green onions diced
  • 1 cucumber diced
  • 1 cup vegan feta crumbled

Lemon Dill Vinaigrette

  • ½ tsp minced garlic
  • 1 tbsp dijon mustard
  • 2 lemons juiced
  • ¼ cup extra virgin olive oil
  • 2 tbsp fresh dill chopped
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  • Combine all dressing ingredients in a jar until a smooth dressing is formed. 
  • In a large bowl, add all salad components. Pour the dressing over top, and stir. If prepping for an event or lunch, keep the dressing separate until serving.
