Ingredients

  • 6 cups brussels sprouts shredded in the food processor
  • 1 cup pomegranate seeds
  • ½ cup walnuts crushed
  • ½ cup microgreens
  • 1 cup vegan green goddess dressing

Instructions

  • Add your clean brussels sprouts to a food processor with an S blade and chop until fully shredded. Transfer to a bowl and massage with your hands for 1 minute to tenderize slightly.
  • Combine the dressing ingredients in a blender until smooth.
  • Pour the dressing over top of the brussels sprouts and stir until covered, top with your walnuts, pomegranate and microgreens and enjoy.

Notes

Optional: Garnish with preserved lemons
