I have always been vocal about not being a huge fan of salads. It’s not that I don’t like the flavors, it’s just that most salads are in need of a makeover! While there’s nothing wrong with a classic combo of lettuce, tomato and cucumber, I just want MORE! Do you know what I mean?

It features amazing ingredients full of fiber, vitamins, and other micronutrients. It is served with a deliciously creamy green dressing full of goodness!

How to Make This Recipe

It may seem as if creating a more unusual salad is more complicated. However, this salad is super easy to make!

Start by washing and draining your Brussels sprouts. Take off any outer leaves that look blemished or wilting. If you have a herbivorous pet, such as a hamster, guinea pig, or rabbit, they will love these as a treat! Add the sprouts to a food processor with an S-blade and pulse until finely shredded.

Transfer the shredded Brussels sprouts to a mixing bowl and massage them with your hands for about a minute. This will make the sprouts more tender without losing the crunch. Next, add the vegan green goddess dressing and mix everything together thoroughly. You can make the dressing in advance, or blend the ingredients right before adding the dressing to the shredded Brussels sprout salad.

Finally, add pomegranate seeds, walnuts, microgreens and preserved lemons (if using). That’s it! Enjoy the salad as it is or with a hearty slice of sourdough.

Hack It!

  • For a nut-free version of this salad, replace walnuts with sunflower seeds, pumpkin seeds, or sesame seeds. You can also add some croutons if seeds aren’t an option.
  • The dressing also contains nuts, but thankfully we have a collection of oil-free vegan dressings for you to choose from!
  • Pomegranate seeds add sweetness and extra crunch to this shredded Brussels sprout salad. However, some people don’t like the texture of pomegranate. You are welcome to use fresh pineapple, blueberries, strawberries or green apple instead.

Store This Recipe

You can prepare the ingredients (including the dressing) in advance, and simply keep them separate for up to 3 days until you are ready to enjoy the shredded Brussels sprout salad.

Ingredients

  • 6 cups brussels sprouts, shredded in the food processor
  • 1 cup pomegranate seeds
  • ½ cup walnuts, crushed
  • ½ cup microgreens
  • 1 cup vegan green goddess dressing

Equipment

Instructions 

  • Add your clean brussels sprouts to a food processor with an S blade and chop until fully shredded. Transfer to a bowl and massage with your hands for 1 minute to tenderize slightly.
  • Combine the dressing ingredients in a blender until smooth.
  • Pour the dressing over top of the brussels sprouts and stir until covered, top with your walnuts, pomegranate and microgreens and enjoy.
