Dalgona Matcha

Equipment

Ingredients

  • ¼ cup aquafaba from a can of chickpeas
  • ½ tsp cream of tartar
  • 2 tbsp sugar any granulated sugar of choice
  • tsp matcha powder 3 tsp for stronger flavor
  • 2 cups oat or soy milk adjust the amount as desired

Instructions

  • In a large bowl, add the aquafaba and cream of tartar. Using a hand or a stand mixer, beat until you achieve stiff peaks, approximately 10 minutes. 
  • Gently pour in the sugar and matcha, then beat for an additional 2 to 3 minutes until completely combined and fluffy.
  • Serve over ice and your plant-based milk of choice. 

Notes

  • Use any sugar you prefer to sweeten your drink.
  • To serve, pour your favorite plant-based milk alternative over ice. I recommend soy or oat, but you can use another type if you have an allergy.
  • Got leftover aquafaba? Make vegan marshmallows or homemade vegan mayo.
  • If you don't own a hand or stand mixer, it's possible to whip aquafaba manually. However, I should warn you, it is hard work!
