Aquafaba is truly a magical ingredient. In plant-based cooking, it can be useful in many ways, from aquafaba chocolate pudding to breaded puffball mushrooms.

I love discovering new uses for “chickpea juice”. Unbelievably, you can use it to make fluffy dalgona matcha drink!

Why You’ll Love This Recipe

  • Although matcha still contains caffeine, there is significantly less of it. If you’re trying to cut down, this matcha drink is a great alternative to iced coffee.
  • Look at it this way: every time you open a can of chickpeas, it’s your license to treat yourself to sweet dalgona matcha.
  • If you’re trying to impress someone, this drink looks and tastes GORGEOUS.
  • Along with aquafaba (which is basically free), there are only 4 other ingredients. Talk about budget-friendly! I can guarantee this is cheaper than getting matcha from a coffee shop.

Key Ingredients

Whipped dalgona matcha ingredients laid out and labeled on a light background.
  • Aquafaba, which is the leftover liquid from a can of chickpeas, has similar culinary properties to egg whites. It acts as the fluffy base for the matcha foam.
  • Cream of tartar helps to stabilize aquafaba and help it maintain shape.
  • Matcha is a powdered form of Japanese green tea. It has a small amount of caffeine and a smooth, creamy flavor.
  • Plant-based milk, such as soy or oat, will be the base for the iced vegan matcha latte.

Hack It!

  • Use any sugar you prefer to sweeten your drink.
  • To serve, pour your favorite plant-based milk alternative over ice. I recommend soy or oat, but you can use another type if you have an allergy.
  • Got leftover aquafaba? Make vegan marshmallows or homemade vegan mayo.
  • If you don’t own a hand or stand mixer, it’s possible to whip aquafaba manually. However, I should warn you, it is hard work!
  • Did you know you can easily make oat milk at home?
