Prepare the noodles according to package directions.
While the noodles cook, prepare the vegetables of your choice. Then prepare the sauce. In a jar, whisk together the gochujang, soy sauce, vinegar, maple syrup, peanut butter, garlic, ginger and 2 to 3 tablespoons of hot water, to thin.
Pour the sauce over the noodles, toss, then finish off with the vegetables.
