Ingredients

  • 16 oz rice noodles dry

Gochujang sauce

  • 3 tbsp gochujang
  • 2 tbsp soy sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tbsp peanut butter
  • 1 clove garlic finely minced
  • ½ thumb ginger finely minced
  • 4 tbsp hot water to thin, adjust the amount as needed

Optional toppings

  • 1 cup green onions diced
  • 1 handful cilantro or parsley, chopped
  • 1 red bell pepper seeds removed, sliced
  • 1 cup carrot peeled into ribbons
  • 1 tbsp sesame seeds

Instructions

  • Prepare the noodles according to package directions. 
  • While the noodles cook, prepare the vegetables of your choice. Then prepare the sauce. In a jar, whisk together the gochujang, soy sauce, vinegar, maple syrup, peanut butter, garlic, ginger and 2 to 3 tablespoons of hot water, to thin. 
  • Pour the sauce over the noodles, toss, then finish off with the vegetables.
