Equipment

Ingredients

  • 3 cups mango

Instructions

  • Preheat the oven to 175F and line a baking sheet with a silicone baking mat. Parchment paper can also work, but it must lie completely flat on your baking sheet.
  • Add the mango to a high-speed blender and combine until smooth. Pour the mixture onto the baking sheet, and using a flat spatula, spread it out into a rectangular shape. Make sure the edges are thicker than the center, as they will dry quicker.
  • Place in the oven for 2 1/2 hours. Check on it, and turn the baking sheet. Bake for an additional 2 hours before checking again. The time will vary depending on the water content of the fruit. The fruit leather is ready when it effortlessly lifts off of the silicone sheet or parchment paper. If it is dry around the edges you can rehydrate it with a wet cloth.
