This mango fruit leather is surprisingly close in texture to a chewy, gummy candy. And it’s so easy to make!

How to Make This Recipe

Preheat the oven to 175F and line a baking sheet with a silicone baking mat. Parchment paper can also work, but it must lie completely flat on your baking sheet.

Add the mango to a high-speed blender and combine until smooth. Pour the mixture onto the baking sheet, and using a flat spatula, spread it out into a rectangular shape. Make sure the edges are thicker than the center, as they will dry quicker.

Place in the oven for 2 1/2 hours. Check on it, and turn the baking sheet. Bake for an additional 2 hours before checking again. The time will vary depending on the water content of the fruit. The fruit leather is ready when it effortlessly lifts off of the silicone sheet or parchment paper. If it is dry around the edges you can rehydrate it with a wet cloth.

Hack It!

  • Store your mango fruit leather rolled in wax paper or parchment as desired.
  • If you want to add a hint of acidity, add some lime juice and a little bit of lime zest into the blender. The lime really helps bring out the mango flavor even further!
  • You can use frozen mango, as long as you defrost it before putting it into a blender.
  • Can you make several trays of this at once? Sure you can, if your oven or dehydrator allows this feature. Bear in mind that it may take a little bit longer. On the other hand, you’ll have a larger batch as a result.
