This blueberry fruit leather is such a delicious and simple snack! To me, it is reminiscent of fruit roll-ups I used to love as a kid. If you have some sad-looking berries, this is a great way to revive them into a delicious recipe.

Welcome back to Scrappy Cooking series! I think we can all relate to buying a bunch of fresh produce with the best intentions… Only to leave it to wilt at the back of the fridge. This blueberry fruit leather is a great way to extend the life of your berries and make them into a delicious, simple snack.

Why You’ll Love This Recipe

  • Honestly, it could not get any simpler. Three ingredients. No special equipment. No mess.
  • This is a great way to use up berries if you shop seasonally! It may be cheaper to buy blueberries in bulk, and this blueberry fruit leather makes great use of the berries.
  • This recipe is a great way to use and preserve almost any fruit.
  • The main idea behind Scrappy Cooking is that it reduces household waste by using parts of produce that usually get scrapped, as well as using fruit and veggies that are on their way out in terms of freshness. This blueberry fruit leather will not only help you reduce waste, it will also save you money.
  • This snack is pretty much as healthy as fresh berries, but longer-lasting. Also, it doesn’t need to be refrigerated, and it’s not messy! Add some to your work lunch or your kids’ lunch box, and enjoy!

How to Make This Recipe

First, you gotta do some prep. Preheat the oven to 175F. Line a baking sheet with a silicone sheet or baking parchment. Please note that if using parchment, it needs to be lying flat in the baking sheet.

Blend up the berries with chia and maple syrup. Using a spatula, spread the mixture in the baking sheet as evenly as possible. You want the layer to be thick enough to bind together, but thin enough to dehydrate properly. Bear in mind that the leather will shrink once the water is removed.

The next part is both easy and a bit tricky. On one hand, you can sit back and relax. On the other, you’ve got to be able to gauge how long to leave the product in the oven for the optimal result. First, I left this in the oven for two and a half hours, before turning it and letting it to dehydrate for a couple more hours. You’ll know it’s ready when the fruit leather just… slips off without effort.

If you own a dehydrator, this method is also suitable! Line the dehydrator tray with parchment or silicone. Stick your blueberry mixture in and forget about it for a while. Depending on the water content in the berries, and the dehydrator you are using, it may take somewhere between 8-12 hours.

Hack It!

  • Genuinely, this recipe can be made with almost any type of sweet fruit or berries. You are welcome to use strawberries, raspberries, blackberries, gooseberries, cherries, or a berry mix even! You can also use fruit like peaches, grapes, apricots, or nectarines.
  • Can you make several trays of this at once? Sure you can, if your oven or dehydrator allows this feature. Bear in mind that it may take a little bit longer. On the other hand, you’ll have a larger batch as a result.
  • You know what else you can use to make this fruit leather? Leftover cranberry sauce! That’s right, once the holidays are over, don’t let the cranberry sauce go to waste. Make this yummy treat instead!
  • You don’t have to wait for your produce to be going bad before you make this recipe. If you enjoyed it, you can make this blueberry fruit leather with fresh, frozen, or even canned blueberries.

5 from 9 ratings

Ingredients

  • 3 cups blueberries, or fresh berry of choice (strawberries, raspberries or mixed berries)
  • 1 tbsp chia seeds
  • 2 tbsp maple syrup, optional

Instructions

  • Preheat the oven to 175F and line a baking sheet with a silicone baking mat. Parchment paper can also work, but it must lie completely flat on your baking sheet.
  • Add all ingredients to a high speed blender and combine until smooth.
  • Pour onto the baking sheet, and using a flat spatula, spread out into a rectangle shape. Ensure the edges are thicker than the center, as they will dry quicker.
  • Place in the oven for 2 1/2 hours. Check, and spin the baking sheet. Bake for an additional 2 hours before checking again. The time will vary depending on the water content of the fruit. The fruit leather is ready when it effortlessly lifts off of the silicone sheet or parchment paper. If it is dry around the edges you can rehydrate with a wet cloth.
  • Store rolled in wax paper or parchment as desired.
