Peel and slice your carrots on an angle, around 1” in length.
In a jar, mix the olive oil, maple syrup, cinnamon, ginger, salt and paprika until combined.
Transfer the carrots to a bowl and pour the glaze over top.
Put on a baking sheet, and roast for 20 to 25 minutes, tossing halfway through. In the last two minutes, set the oven to broil to caramelize the carrots.
