  • Carrots are the start of the show. Naturally sweet, full of beta carotene and fiber, they also add a pop of color to the holiday table.
  • Warm spices, including cinnamon, ginger, and paprika, perfectly complement the natural sweetness of carrots.
  • Maple syrup is a great vegan alternative to honey which is traditionally an ingredient for roasting carrots.

Hack It!

  • Maple syrup can be both expensive and not accessible in some parts of the world. You can use an alternative like vegan honey, date syrup, or agave.
  • You can modify the spices and seasonings based on your preference. For instance, you can add extra spices (such as nutmeg, bay leaf, or clove), as well as adjust the amount of the spices and salt listed here. You can also add some heat to your glaze with some chili flakes or sriracha. Yum!
  • Although these maple glaze carrots are intended as a side dish, they also make an amazing healthy snack, as well as filling for a sandwich or a wrap.
  • If you want to go the extra mile, make this recipe using colorful heirloom carrots. The results will look spectacular!
