Ingredients

Grated Tofu

  • 14 oz extra-firm tofu, 1 block, grated
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Salad

  • 3 stalks celery, finely chopped
  • 1 apple, peeled and diced
  • 2 tbsp walnuts, crushed
  • 2 tbsp red onion, or more, finely chopped

Dressing

  • 1 heaping tbsp vegan yogurt, unsweetened
  • 1 heaping tbsp vegan mayo
  • 1 tbsp olive oil
  • 1-2 tsp poppy seeds
  • ½ lemon, squeezed
  • 1 tsp maple syrup
  • Salt & pepper, to taste
