  • 3 cups stale bread broken into pieces
  • 1 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tbsp flaxseed mixed with 2 tbsp water to achieve a flax egg
  • ½ cup brown sugar
  • 4 tbsp cocoa powder
  • 1 tsp baking powder

Instructions

  • Preheat the oven to 350F and prepare a cake pan with parchment paper or oil.
  • Combine all ingredients in a blender friendly container, and blend until a batter is formed.
  • Bake for 37 minutes until cooked through. Top with icing of choice (I used melted chocolate and coconut oil) and fresh fruit.
