  • 1 cup vegan yogurt I used Icelandic Provisions Oat Milk Skyr
  • cups strawberries sliced
  • 1 tbsp strawberry jam
  • 1 cup semi-sweet chocolate vegan, melted
  • ½ cup coconut flakes for topping

Instructions

  • Prepare a baking sheet with parchment. 
  • In a bowl, combine the strawberries, yogurt and strawberry jam.
  • Utilizing half of the yogurt mix, spoon four "mounds" onto the baking sheet, dispersed far apart. Add the popsicle sticks to each, then repeat with the remaining yogurt mixture over top. 
  • Place in the freezer for at least 4 hours to set. 
  • Once frozen, drizzle with melted chocolate and coconut flakes as desired. Return back to the freezer until the chocolate is hardened. Allow to sit out and soften slightly before enjoying immediately. 

Notes

  • If you have popsicle molds, you can pour the mixture into shapes instead of clusters.
  • Don't be afraid to swap your fruit for a different flavor. Use raspberries, blueberries, mixed forest berries, or mango.
  • Want to add some crunch? Sprinkle crushed nuts on melted chocolate before freezing.
  • No jam? Just mash some extra strawberries and add a dash of maple syrup to sweeten naturally.
  • Depending on how you make them, this recipe can yield 4-8 popsicles.
