1cupvegan yogurtI used Icelandic Provisions Oat Milk Skyr
1½cupsstrawberriessliced
1tbspstrawberry jam
1cupsemi-sweet chocolatevegan, melted
½cupcoconut flakesfor topping
Instructions
Prepare a baking sheet with parchment.
In a bowl, combine the strawberries, yogurt and strawberry jam.
Utilizing half of the yogurt mix, spoon four "mounds" onto the baking sheet, dispersed far apart. Add the popsicle sticks to each, then repeat with the remaining yogurt mixture over top.
Place in the freezer for at least 4 hours to set.
Once frozen, drizzle with melted chocolate and coconut flakes as desired. Return back to the freezer until the chocolate is hardened. Allow to sit out and soften slightly before enjoying immediately.
