Equipment

Ingredients

  • 4 cups unsweetened coconut yogurt sub soy or oat yogurt
  • ½ tsp turmeric
  • ¼ cup white sugar
  • 3 bananas sliced
  • 1 tsp vanilla extract
  • 2 cups vegan vanilla wafers
  • 1 cup coconut whipped cream

Instructions

  • In a mixing bowl, add the coconut yogurt, vanilla extract, sugar, turmeric and one of the sliced bananas. Using either the back of a fork or a handheld mixer, combine the ingredients until a smooth vanilla style pudding is formed.
  • Using either a jar, or a large glass serving container, layer 1/4 of the pudding mixture in the bottom, followed a layer of the wafers, then banana. Repeat until the ingredients are used up. I had 4 layers.
  • Refrigerate for 2 hours to chill. Then top with coconut whipped cream and any remaining crushed wafers. Eat immediately.
