Veganizing this recipe was surprisingly easy, and you should have seen my fiance’s eyes light up when he ate the first spoonful of the vegan Magnolia Bakery banana pudding! In addition to bananas and wafers used in the original dessert, I added vanilla pudding made with whole-food ingredients such as coconut yogurt and turmeric.

How to Make This Recipe

In a mixing bowl, combine coconut yogurt with vanilla extract, sugar, turmeric, and one of the sliced bananas. Using either a fork or a handheld mixer, combine the ingredients until you get a smooth, velvety vanilla pudding. Personally, I recommend using a mixer to whisk more air into your pudding and create that classic fluffy texture.

Next, we just need to assemble our layered pudding. You can split it into single-serving jars or use a large glass container. Start with a layer of vanilla pudding at the bottom (approximately 1/4 of the mixture). Add a layer of wafers followed by sliced bananas. Repeat until the ingredients are used up. I had 4 layers.

  • When I was making this recipe, I made a large batch containing 6 servings. However, you can easily adjust the number of servings, even going as far as making a single serving for you to enjoy.
  • Even if you are making a six-serving dessert, you can use jars or similar small containers to create individual servings of this vegan Magnolia Bakery banana pudding.
  • If you don’t have access to coconut yogurt, or you simply don’t like it, you can use soy yogurt or oat yogurt instead. Frankly, I am just happy we live in the time when there are so many vegan options available!
  • Feel free to get creative with your toppings. I used leftover wafers, which I crushed over the top of the pudding. However, you can spruce up your banana pudding with banana chips, freeze-dried raspberries, or colorful sprinkles!
  • If you can find wafers that are gluten-free, you can serve this to your gluten-free guests as well!

Ingredients

  • 4 cups unsweetened coconut yogurt, sub soy or oat yogurt
  • ½ tsp turmeric
  • ¼ cup white sugar
  • 3 bananas, sliced
  • 1 tsp vanilla extract
  • 2 cups vegan vanilla wafers
  • 1 cup coconut whipped cream

Equipment

  • Electrical mixer or fork
  • Jars or glass container

Instructions 

  • In a mixing bowl, add the coconut yogurt, vanilla extract, sugar, turmeric and one of the sliced bananas. Using either the back of a fork or a handheld mixer, combine the ingredients until a smooth vanilla style pudding is formed.
  • Using either a jar, or a large glass serving container, layer 1/4 of the pudding mixture in the bottom, followed a layer of the wafers, then banana. Repeat until the ingredients are used up. I had 4 layers.
  • Refrigerate for 2 hours to chill. Then top with coconut whipped cream and any remaining crushed wafers. Eat immediately.
