Common ingredients include onions, carrots, celery, garlic, leeks, mushrooms, tomatoes, and herbs like thyme, parsley, and bay leaves. Some variations may also include ingredients like ginger, fennel, or even seaweed for added depth of flavor.
The invention of vegetable broth likely stems from the desire to create a flavorful and nutritious liquid base for vegetarian and vegan dishes. It adds depth and complexity to dishes, enhancing the overall taste without relying on animal products.
Traditionally, the vegetables are strained from the liquid once the broth is infused with the flavors. The unique quality of this hidden veggie broth is that they are blended right in, providing dietary fiber as well as various vitamins and other nutrients.

Kitchenware and Equipment
All you need are a few basics, including a cutting board, a knife, a large pot, and a blender.
Personally, I would recommend an immersion blender to reduce clean-up. However, I’ve also made this hidden veggie broth with my Ninja countertop blender before and it was divine!
If you are planning to freeze any of the broth for long-term storage, reusable silicone ziplock bags are a great essential to have in your plant-based kitchen.

How to Make This Recipe
I promise you, most of the process to make this hidden veggie broth is entirely hands-off. You get to sit back and wait while the veggies infuse the water with the amazing flavors.
Start by prepping your ingredients. You can chop them by hand or use mechanical or electrical vegetable dicers.


To a large pot, add the chopped celery, carrot, onion, zucchini, and garlic. Saute for a few minutes over medium heat along with turmeric and salt.
Then, add water and bring the contents to a boil before lowering the heat. Let your broth simmer, uncovered, for about 10 minutes before turning off the heat. Don’t worry, if you’re a busy person juggling several tasks at once, you can leave it on the stove for a bit longer.
Wait for the soup to cool down until it is safe to handle. Blend the contents until you have a velvety smooth vegetable broth. A voila!


Hack It!
- Some of the water will evaporate during the cooking. If you prefer a thinner consistency, add more water during the blending process.
- This is such a versatile dish! You can enjoy this vegetable broth by itself or use it as a component in soups, stews, stir fry recipes, and more!
- You can treat this broth similar to some of the scrappy cooking recipes. If you have some leftover herbs, greens, or a handful of veggies, you can add them in and prevent food waste!
- Similarly, you can adjust the spices and salt to your taste. For instance, you can add some peppercorns and bay leaves while the mixture simmers.

The Recipe: Hidden Veggie Broth
Ingredients
- 2 stalk celery, chopped
- 1 carrot, medium, chopped
- 1 yellow onion, chopped
- ½ zucchini, chopped
- 3 cloves garlic
- ¼ tsp turmeric
- 1 tsp salt
- 6 cup water, or more to thin
- fresh parsley, chopped, optional
Instructions
- Add the celery, carrot, onion, zucchini and garlic to a pan over medium heat along with the turmeric and salt. Saute until fragrant, approximately 5 minutes. Pour in the 6 cups of water, and bring to a roaring boil. Lower the heat, and simmer, uncovered, for approximately 10 minutes.
- When safe to handle, using an immersion blender or countertop blender, combine the soup until a velvety smooth broth is formed. You can add more water as needed to thin to a desired consistency and sprinkle in fresh parsley for color.
- Use this as a nutrient dense broth of soups, to cook your rice in or for sautéing vegetables.
