Ingredients

  • 3 Roma tomatoes, diced
  • 4 Persian cucumbers, diced
  • 1 red onion, peeled and diced
  • ½ cup parsley, finely chopped
  • ½ cup mint, finely chopped
  • 1 tsp salt

  • 4 pita breads
  • 4 tbsp vegan tzatziki, or hummus

Instructions 

  • In a bowl, combine the tomato, cucumber, red onion, parsley, mint, salt, pepper and lemon juice. Gently toss. Now you have a Shirazi salad.
