Ingredients

  • 2 cups strawberries, sliced
  • 1 cup cherry tomatoes, sliced
  • 1 cup fresh mint, chopped
  • ½ cup walnuts, crushed
  • ½ cup pickled onions
  • 1 cucumber, sliced
  • ½ cup vegan feta
  • 1 cup mixed greens

Orange Vinaigrette

  • ½ orange, squeezed
  • 2 tbsp dijon mustard
  • 1 tbsp maple syrup
  • 3 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar

Equipment

Instructions 

  • Add all salad ingredients to a bowl. Mix the vinaigrette ingredients in a jar until combined.
