Making these Pink Ombre Pancakes was so much fun and they turned out absolutely delicious. I used Dragon Fruit Powder, but you can use any flavoring or colored powder you want. The process is the same. 

These pancakes were easy to make and only required two steps: make the batter and add the powder. 

You can top these pancakes with almost anything, depending on the flavor of powder you use. I went for a more fruity theme with maple syrup, but you can also do chocolate too. They are also gluten-free and nut-free!

In this recipe, I used Wilderness Poets Freeze Dried Dragon Fruit Powder. When shopping for dragon fruit powder, I recommend always reading the ingredient label to find something with as few additives as possible.  

Ways To Top These Vegan Pink Ombre Pancakes

My absolute favorite way to top these pancakes is with maple syrup and fruit. For these dragon fruit pancakes, I used raspberries and blackberries. You can also use: 

  • Blueberries
  • Vegan Chocolate Chips
  • Powdered Sugar 
  • Fruit Puree
  • Vegan Ice Cream 
  • Coconut Whipped Cream 

Hack It

  • Amp up the flavor: By adding your topping in the mix too.
  • Add protein: Adding unflavored protein powder into your pancake mix. You might need some extra water. 
  • Change the texture: Replacing the water with almond milk will make the pancakes buttery consistency.
