There is definitely a stereotype that vegans only eat greens. And even though most of my recipes prove that theory to be wrong… This one is pretty on the nose!
Trust me though, it is well worth it. This everything green sauce is to die for! It’s aromatic, spicy, creamy, salty… It’s just perfect!

How to Make This Recipe
Did I mention that this recipe is super simple? I meant it!
First, we need to soften the sunflower seeds by boiling them for 10 minutes or so. This ensures that they blend into a smooth, creamy mass, even with a run-of-the-mill blender.
Once the seeds have been boiled, drain the liquid. Add them to your blender.
Next, add the rest of the ingredients: jalapeño, fresh cilantro, spinach, green onions, lemon juice, garlic, and avocado. Top it off with water and salt, then blend until smooth.
That’s it! Enjoy immediately, whether you use it as a dip, salad dressing, or something else entirely.

- If you have the time (and enough forethought), you could soften the sunflower seeds by soaking them in cold water overnight. This way, the recipe takes even less time to make!
- I adore sunflower seeds because they make a great nut-free alternative to many creamy vegan recipes. They are also much cheaper! However, you are welcome to swap sunflower seeds for pumpkin seeds, cashews, or even white beans!
- If you’re one of those people who find that coriander tastes like soap, sub parsley or basil for coriander.
- Feel free to add more green! Dill, chives, sorrel… Is there such a thing as too much green? I don’t think so.

Best Tips for Everything Green Sauce
- To prevent oxidation, drizzle some olive oil over the top of your sauce and store it in an airtight container in the fridge. If some discoloration takes place, just scrape it off the top before you enjoy it.
- If you’re not sure about your spice tolerance, only add a little bit of jalapeño at a time. Taste your sauce each time you blend it all together. Trust me, it’s easier to add more than to remove excess spice.
- This recipe is easy to half if you’re only making enough for a small household. Only making as much as you will be able to eat is a great way to reduce waste. Equally, you can double or even triple this recipe for a big party, or as food prep for the week.

The Recipe: Everything Green Sauce
Ingredients
- 1 jalapeno, chopped, seeds remove for mild sauce
- 1 handful cilantro, large
- 1 handful spinach, large
- 1 cup green onions, roughly chopped
- 1 clove garlic
- Âľ tsp salt, or more to taste
- ½ avocado, stone removed
- ½ cup raw sunflower seeds, soaked overnight or boiled for 10 minutes
- 1 cup water
- 1 lemon, juiced

- Combine all ingredients in a high speed blender until smooth. Taste and adjust salt as needed. Enjoy immediately.
