Broccoli Tater Tots

I love broccoli, and my least favorite part has always been throwing away the stems. That is, until I realized that broccoli stems are actually edible. In fact, they are delicious and full of nutrients!

How to Make This Recipe

Preheat your oven or air fryer to 400F. Line a tray with baking parchment.

Prep your veggies. Make sure to peel the tough skin from the broccoli stems before you grate them.

To make a flax “egg”, mix flax seed with water and set it aside for a few minutes to thicken. This goopy mixture will help the veggies stick together.

In a mixing bowl, combine broccoli, potato, flax egg, nutritional yeast, and sea salt. Wet your hands and roll the mixture into “tots”. Spray them liberally with olive oil and place them on a baking tray.

Bake in the air fryer for 10 minutes, then flip them over and bake for 8 more. In the oven, you may have to leave the tots for a bit longer. They should get browned and crispy on the outside.

Add your favorite dip and enjoy!

  • These broccoli tater tots can be served with a variety of dips, including hummus, ketchup, barbeque sauce, artichoke and spinach dip, vegan whipped feta dip, vegan buffalo dip, and more!
  • If the veggie mixture is a bit moist, you can add a tablespoon of flour. For a gluten-free option, use chickpea flour.
  • In earnest, this can be a great way to incorporate more veggies into your or your child’s diet. Shredded carrots, broccoli stems, spinach, parsley, onions, leeks… Mixed with potatoes, they make delicious tater tots.
  • Who says you have to eat tater tots on their own? Why not add them to a sandwich or a wrap? Better yet, why not serve them as part of a salad or a nourish bowl?
  • If you have a waffle maker, you can use the broccoli potato mixture to make yummy potato waffles, too!

The Recipe: Broccoli Tater Tots

A great way to use up an entire broccoli in a delicious snack!

Ingredients

  • 2 broccoli stems, grated
  • 1 broccoli head, finely chopped
  • 1 potato , grated
  • 1 tbsp flax meal, mixed with 2 1/2 tbsp water
  • 1 tbsp nutritional yeast
  • ½ tsp sea salt

Equipment

Instructions 

  • Preheat your air fryer to 400F and line a baking sheet with parchment. Alternatively set your oven to 400F.
  • Peel the woody skin off of your broccoli stems, and grate. Also grate your potato and finely dice the broccoli floret. Mix your flax meal with water, and set aside for five minutes to thicken to create a flax egg.
  • Add all listed ingredients apart from in a bowl until completely mixed. Using wet hands, form the mixture into "tots" and set onto your baking sheet.
  • Place in the air fryer for 10 minutes. After 10 minutes, flip them, and cook for an additional 8 minutes until they are browned on the outside. Enjoy immediately with your favorite dip.
