How to Make This Recipe

Start by dicing and slicing your veggies. Meanwhile, heat the pan over medium heat. You may add a splash of water or broth to help the cooking process.

Add celery, carrot, onion, potato, zucchini and garlic to the pan. Stir in turmeric and salt, and saute everything together until fragrant.

Next, add water, and bring the contents to a roaring boil. Reduce the heat, and let your soup simmer for about 10 minutes. Your goal it to cook everything until the veggies are soft.

Once the soup is a safe handling temperature, blend everything together until you have a velvety smooth broth. You can add extra water for a thinner consistency if you prefer.

At this time, bring your soup back to a boil and add the pasta. Cook for approximately 8 minutes, until the noodles are cooked through. Finally, add some parsley and enjoy.

  • You can blend the soup using an immersion blender or countertop blender, depending on what you have.
  • You can enjoy this soup with dried parsley or fresh chopped parsley. Even more delicious if it comes straight from your garden!
  • Consider this soup a base recipe. If you want to add some spice to it, you could include some chilli powder or hot sauce in the broth. If you wanted a deeper savory flavor, you could add miso paste, etc.

The Recipe: Hidden Veggie Soup

Ingredients

  • 1 stalk celery, chopped
  • 1 carrot, chopped
  • 1 yellow onion, chopped
  • 1 yukon gold potato, chopped
  • ½ zucchini, chopped
  • 3 cloves garlic
  • 1 ½ tsp salt
  • ½ tsp turmeric
  • 7 cups water
  • 1 cup cappellini pasta, or macaroni
  • Parsley, dried or fresh, for garnish

Instructions 

  • Add the celery, carrot, onion, potato, zucchini and garlic to a pan over medium heat along with the turmeric and salt. Saute until fragrant, approximately 5 minutes. Pour in the 5 cups of water, and bring a roaring boil. Lower the heat, and simmer, uncovered, for approximately 10 minutes. 
  • When safe to handle, using an immersion blender or countertop blender, combine the soup until a velvety smooth broth is formed. You can add more water as needed to thin to a desired consistency.
  • At this time, add the noodles of choice to the soup, and cook for approximately 8 minutes, until cooked through. Add dried or fresh diced parsley and enjoy.
