This is one of the easiest meal prep recipes with a huge pay-off. All you have to do is blend all ingredients together until smooth.

Pour the batter into an ice cube tray, ideally with a lid. It can stay frozen for up to a month. 

When it’s time to enjoy these pancakes, remove the cubes from the tray and cook on low heat in a non-stick pan until fully thawed and cooked.

  • This vegan pancake batter can also be used to make waffles. It’s an easy way to give you some variety!

The Recipe: Vegan Freezable Oat Pancakes

An incredible meal prep recipe for healthy, delicious vegan pancakes. And guess what, you only need four ingredients!

Ingredients

  • 1 cup rolled oats
  • 1 banana, large
  • ¾ cup plant-based milk
  • 1 tsp baking powder

Equipment

Instructions 

  • Blend all ingredients until smooth. Pour into an ice cube tray, ideally with a lid. Store in the freezer for up to one month. 
  • When ready to eat, remove the pancakes from the ice cube tray. Cook on low heat in a non-stick pan with the lid on, checking intermittently until the pancake cubes have melted, approximately five minutes. Flip and cook until browned on both sides.
