How to Make This Recipe

First, make your flax egg and allow it to set. Meanwhile, preheat your oven to 375F and prep a loaf pan. You can use baking parchment or spray oil. 

Next, combine milk, vanilla extract and coconut yogurt. When it’s ready, add the flax egg and stir it in.

In a separate mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda and salt.

Now pour the wet ingredients into the dry ingredient bowl. Use a spatula to gently stir everything together until you have a smooth batter. Carefully fold in the chocolate chips.

Pour the batter into the lined loaf pan, and allow it to bake in the oven for 30 to 35 minutes. Bake until the center is set. You can check it with a toothpick: if it comes out dry, your cake is ready.

Take the loaf out of the oven and let it rest for at least 10 minutes before slicing.

Hack It!

  • Store on the countertop in a sealed container for up to five days. Alternatively, cut into slices and freeze.
  • The chocolate chips are optional. If you’ve run out, you can still enjoy this chocolate loaf! In fact, you can sub crushed walnuts or vegan mini-marshmallows for chocolate chips.
  • If you don’t have a loaf pan, don’t you worry. This recipe works amazing as muffins! Just beware that the cooking time will reduce and check on your muffins regularly.
  • You can use any plant-based milk depending on your preference. How about some homemade oat milk?

Ingredients

  • 2 flax eggs
  • 1 cup non-dairy milk, unsweetened
  • 1 tsp vanilla extract
  • ¼ cup coconut yogurt, unsweetened
  • 1 tsp apple cider vinegar
  • 1 ½ cup flour, regular white or oat
  • ½ cup cocoa powder
  • ¾ cup coconut sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ cup dark chocolate chips, vegan
  • pinch of salt

Equipment

Instructions 

  • Preheat the oven to 375F and prepare a loaf pan with parchment or spray oil. 
  • In a small bowl, combine the ground flaxseed with water to make flax egg. Allow that to sit for 15 minutes. 
  • In the meantime, combine the wet ingredients, including the milk, apple cider vinegar, vanilla extract and coconut yogurt. Add in the flax egg and stir.
  • In a separate bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda and salt.
  • Pour the wet ingredients into the dry and gently stir until a batter is formed. Fold in the dark chocolate chips.
  • Transfer to the loaf pan, and bake for 30 to 35 minutes, until the center is set. Remove from the oven and allow to sit for at least 10 minutes before slicing. Store on the countertop in a sealed container for up to five days.
