Healthy Vegan Pumpkin Spice Latte (PSL)
This Healthy Vegan Pumpkin Spice Latte (PSL) is a simple morning brew reminiscent of the changing season from summer to fall.
For this easy recipe, you need just five plant-based ingredients and 10 minutes of your time. I promise it tastes even better than the Starbucks version.
I recently found out the Starbucks PSL isn’t vegan, because there’s cow’s milk in the syrup. But no worries, this simple homemade vegan version tastes even better!
What Is Pumpkin Spice?
Pumpkin Spice is a spice mixture that is often used in pumpkin pie to give it it’s signature cinnamony flavor.
A standard combination for the recipe includes:
- 18 parts ground cinnamon
- 4 parts ground nutmeg
- 4 parts ground ginger
- 3 parts ground cloves
- 3 parts ground allspice
You can combine these and store in them in your pantry all year long for a pumpkin like flavor to baked goods, or lattes!
If you can’t get your hands on pumpkin spice, I always suggest swapping in cinnamon as it is the dominant flavor.

How Do You Make A Pumpkin Spice Latte?
For this easy vegan pumpkin spice latte recipe, you just need a stove and a pot.
You add all five ingredients to the pot, heat, whisk and serve. I suggest topping with coconut whipped cream and more pumpkin pie spice to really bring your latte over the edge.
For this pumpkin spice latte recipe, we used:
- Pureed Pumpkin (make sure to buy plain pureed pumpkin, not pumpkin pie filling which is packed with added sugar)
- Brewed Black Coffee
- Unsweetened Cashew Milk (you could use any plant milk but we find cashew milk makes it especially creamy)
- Pumpkin Pie Spice
- Maple Syrup (again, you could use just about any sweetener is this latte recipe, but we find maple syrup adds to the fall flavor)
Optionally, you can add coconut whipped cream on top. We just used the stuff from the can, and topped the recipe with more pumpkin pie spice to boot.

Can You Make This Latte Without Coffee?
If you’re wanting to enjoy your pumpkin spice drink as a night cap, we suggest simply omitting the coffee from the recipe or using decaf instead.
It won’t have that signature PSL flavor, but is still insanely delicious and will warm your soul right before bed!

Healthy Vegan Pumpkin Spice Latte
- 2/3 Cup Brewed Coffee
- 1 Cup Unsweetened Cashew Milk
- 2 Tbsp Pumpkin Puree
- 1/2 Tsp Pumpkin Pie Spice
- 1 Tbsp maple syrup
- Add all ingredients to a pot over medium heat. Whisk, and heat until warm.
- Pour in a mug and enjoy with coconut whipped cream on top if desired.
