Why You’ll Love This Recipe

  • Even if you already have some pizza dough, it takes a while to roll it out, set out the toppings, and bake it. Doesn’t quite work for a sudden craving. Using flatbread is a hack of sorts, that can have you enjoying pizza in less than 15 minutes!
  • You can put your own spin on this pizza. I mean, the entire point of pizza is that you can choose any toppings you want!
  • This is the perfect opportunity to get rid of some veggies you have at the back of your fridge. Technically, it can be a Scrappy recipe!
  • This vegan flatbread pizza is proof that pizza doesn’t need cheese to be delicious.

How to Make This Recipe

First, you need to preheat your oven to 425 degrees Fahrenheit and line a baking tray with parchment. You can also use a pizza stone or a seasoned cast iron pan if you have one.

Then, sauté the mushrooms, bell peppers, and onions with garlic, salt, and a tablespoon of water over medium heat. Keep going until the veggies are soft, for approximately 3 to 5 minutes.

On the flatbread of your choice, add the marinara sauce, 1 tablespoon of nutritional yeast, sautéed vegetables, garlic powder, fresh basil, then more nutritional yeast on top.

Pop the flatbread in the oven for 8 to 10 minutes until toasty and warm. Before eating, drizzle with a balsamic glaze. Enjoy!

Hack It!

  • You can meal prep this pizza by setting up a mise-en-place. Chop your toppings in advance and store them in the fridge. When it’s time to make pizza, just add sauce and throw a few toppings on the flatbread before it goes in the oven.
  • You can customize almost any aspect of this pizza. For example, you can use vegan naan, pita, or homemade flatbread. And if you’re gluten-free, you can still enjoy this pizza with GF flatbread.
  • Although tomato-based sauce is the traditional foundation for pizza, you can use hummus, barbecue sauce, or pesto.
  • Feel free to add or swap veggies that go on your pizza! Try adding zucchini, sundried tomatoes, spinach, arugula, pineapple, or artichokes.
  • And finally, I won’t stop you if you want to add some store-bought vegan cheese or a plant-based meat alternative. Live it up!
