Vegan Pulled Pork

Pulled pork sandwiches are a classic comfort food meal. For this recipe, we’ve duplicated those delicious pulled pork flavors and texture with vegan pulled pork oyster mushroom sandwich.

Usually, pulled pork is made with… pork, (duh!) smothered in BBQ sauce. For this vegan pulled pork, I swapped out the meat for oyster mushrooms. I added some seasonings and my favorite BBQ sauce, and VIOLA.

This recipe is excellent for vegans on a budget. It uses minimal ingredients, most of which you probably already have at home. It also comes together in just 15 minutes flat, so it’s perfect for a quick lunch or meal prep at home.

How to Make This Vegan Pulled Pork With Mushroom Sandwich

This vegan pulled pork sandwich is super simple to make and takes less than 15 minutes.

First, you’ll need to shred the oyster mushrooms using a knife and fork until a pulled pork consistency is achieved.

Then, sauté the onions and garlic in a pan over medium heat until softened for 2 to 3 minutes.

After sauteing, add the shredded oyster mushrooms to the pan along with the spices, and then sauté until the water has fully evaporated and they begin to crisp slightly approximately 8 to 10 minutes.

Once they are slightly crispy, add your preferred bbq sauce to the pan and completely coat the pulled mushrooms.

And finally, serve on your favorite bun with coleslaw if desired. 

Why Mushrooms?

Mushrooms are extremely beneficial to your health. They’re packed with essential nutrients like antioxidants, vitamins, minerals, and fibers. 

Oyster mushrooms in particular are known to have high amounts of beta-glucan, which is a form of fiber. This fiber helps you regulate blood sugar and has been linked to improved cholesterol. 

Mushrooms are one of my favorite substitutions for meat because they are so high in nutrients and they taste amazing. If you are wanting to eat more whole-food plant-based meals, I highly suggest giving mushrooms a try!

  • 2 Cloves garlic minced
  • ½ Yellow onion chopped
  • 10 Oyster mushrooms shredded with a fork
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • ¼ tsp Sea salt
  • ¼ cup Preferred bbq sauce
  • 1 Bun of choice (I used a whole grain English muffin)


  • Shred the oyster mushrooms using a knife and fork until a pulled pork consistency is achieved.

What BBQ Sauce Should You Use?

BBQ sauce is often packed with oil and refined sugar. If I am buying BBQ sauce from the store, I always try to find a sauce that is vegan, oil-free, and uses natural sources of sugar- like dates. 

Here are some of my favorite vegan and oil free BBQ sauces to try on your pulled pork sandwich: 

Mother Raw Organic BBQ Sauce

This BBQ sauce is delicious and oil-free. Plus, it is sweetened with dates, so there is no refined sugar. 

Tessemae’s Organic BBQ Sauce

This is another great oil-free and vegan option for BBQ sauce. It is also refined sugar-free and sweetened with dates. 

Primal Kitchen BBQ Sauce 

Another fantastic oil-free and vegan BBQ sauce! This one has a great flavor and it is unsweetened, so no hidden sugar here to worry about.
