How to Make This Recipe

Prep your ingredients, slicing and dicing as instructed. In a large wide mouth mason jar or soup container, stack the ingredients in the order they are listed. That’s meal prep done!

When you’re ready to eat, you can heat it in the microwave with some water or broth, or just add boiling water to your jar and leave it for a minute. IMPORTANT: if you use a microwave, heat the soup in a container that doesn’t have any metal components! You can either use a jar with a different lid attachment, or remove the metal frame from the mason jar before putting it into the microwave. Stir your soup, taste, and adjust the seasoning if necessary. Enjoy!

Hack It!

  • This recipe is so easy to customize! If you like heat, you can add extra kimchi or sriracha, or if you prefer a milder flavor, you can hold those back.
  • Can’t have soy? No problem. Instead of miso paste and soy sauce, add some liquid aminos, ginger paste and garlic paste. For a tofu alternative, try Burmese tofu, pumkin seeds tofu, or seitan.
  • For a gluten-free version of this recipe, use your favorite gluten-free noodles. I like rice noodles or glass noodles, and then can actually go into the jar dry!
  • If you have some veggies that are starting to look sad in the fridge, add them to your soup! As well as the listed ingredients, you can add green onions, kale, celery, broccolini, mushrooms and more!
  • If you’re in the percentage of population who think cilantro tastes like soap, it’s easy to fix. Swap cilantro for celery greens, parsley or green onions.

Store This Recipe

Assuming you’re not using vegetables that are on the brink of going off, pre-made jars can last up to 4 days in the fridge. If you are making the ramen jars to use up older ingredients, just make sure to eat it within 1-2 days.

A delicious vegan soup jar recipe perfect for meal prep! Just add hot water when you're ready to eat.

Ingredients

  • ¼ cup kimchi
  • ½ tbsp miso paste
  • 1 tsp soy sauce
  • ½ tsp sriracha
  • ½ cup extra firm tofu, sliced into cubes
  • ¼ cup carrots, sliced into matchsticks
  • ¼ red bell pepper, diced
  • ¼ cup red cabbage, thinly sliced
  • ½ cup ramen noodles, boiled for 2 minutes , drained and rinsed
  • 1 handful cilantro

Equipment

Instructions 

  • In a large wide mouth mason jar or soup container, stack the ingredients in the order they are listed. Allow to sit in the fridge for up to four days, and when ready to eat, simply add hot water to the quantity of broth desired. Mix and taste. Adjust salt as needed. Enjoy!
