Tiktok Tortilla Trend
These trendy tortilla tacos are so much fun to make and even more fun to eat! They give fast-food tacos places a solid run for their money. I have a few other ways to try out this trend – Kimchi or Pizza style!
The Recipe: Tortilla Trend Recipe: Crunch Wrap
Ingredients
- 2 slices tomato
- ¼ cup vegan beefless crumbles
- ¼ cup vegan cheese
- ½ avocado, mashed
- 1 whole wheat tortilla
Instructions
- Make a slice in the center of the tortilla out to the edge. outwards to the edge of the tortilla.
- In your mind, divide the area of the tortilla into 4 equal parts, and place each of your individual toppings on these pieces.
- Fold the tortilla quadrants over each other, starting with the bottom left quadrant, until you get a folded quesadilla.
- Pan fry over medium heat until crispy and melty. Enjoy
Vegan Ground Beef Substitute
Use this ground beef substitute to add some bulk and flavor to your tacos. It’s perfect on tacos, in a taco shell, or on a taco salad.
The Recipe: Vegan Ground Beef Substitute
Ingredients
- 2 blocks extra firm tofu, pressed for 20 minutes
- 5 tbsp tomato paste
- 4 ½ tbsp tamari, or soy sauce
- 3 tbsp nutritional yeast
- 1 tbsp garlic powder
- 1 tbsp paprika
- 1 tbsp apple cider vinegar
- 1 tbsp hoisin sauce, or maple syrup
Instructions
- Preheat the oven to 400F and line a baking sheet with parchment paper.
- In a large bowl, crumble the tofu with a potato masher or the back of a fork until it is evenly ground.
- Add all seasonings and sauces to the tofu, and mix until the crumbles are coated evenly.
- Pour the crumbles onto the lined baking sheet, and spread evenly across. Place in the oven for 20 minutes, then mix with a spatula, and place back in the oven for an additional 20 minutes until the crumbles are slightly crispy. You can broil for an additional 2 minutes if more crispiness is desired.
- Allow to cool slightly before adding to a salad, tacos or pasta sauce. Store in the fridge covered for up to 4 days, or in the freezer for up to 3 months.
15 Minute Vegan Tacos
These 15-minute vegan tacos are perfect for a quick dinner. They are made with mushrooms, and they are done in less than 15 minutes.
The Recipe: Vegan Tacos in 15 Minutes
Ingredients
- 2 cups white mushrooms
- 3 cloves garlic
- ½ yellow onion
- ½ tsp cumin
- ½ tsp garlic powder
- ½ tsp chili powder
- 1 ½ tbsp soy sauce
- 4 tortillas

- Add the mushrooms, garlic and onion to a food processor and chop until a mince is formed.
- In a pan over medium heat, sauté in the mince until warmed. Add the spices and soy sauce and combine thoroughly. Sauté for 5 to 8 minutes.
- Serve on a tortilla with your choice of toppings. I used salsa, avocado, bell pepper and red onion.
Vegan Buffalo Wing Tacos
Wrap these buffalo wings in a tortilla or serve them before the taco feast. They are delicious either way.

Ingredients
- 1 Head Cauliflower, Broken into florets
- ½ Cup Brown Rice Flour
- ½ Cup Water
- 1 Tsp Garlic Powder
- ½ Cup Hot Sauce, I used Frank's

- Parchment Paper
- Oven
Instructions
- Preheat your oven to 400F. Line a baking sheet with parchment paper.
- Wash your head of cauliflower and break it into florets.
- Make your batter by combining 1/2 cup of brown rice flour in a bowl with 1/2 cup of water and 1 tsp of garlic powder.
- Toss your florets in the batter, then take them out one by one and place them on the parchment lined baking sheet until finished.
- Bake your florets for 20 minutes, then remove them from the oven, and toss them in 1/2 cup of hot sauce. Place them bake on the baking sheet and cook for an additional 15 minutes until they are crispy.
- Toss in additional hot sauce as desired. Serve with a vegan ranch dressing or in a taco or wrap.
Avocado Mango Salsa
This salsa is so refreshing and delicious. You can eat it with chips or throw it on your tacos. This recipe is the perfect summer twist to your taco night!

Ingredients
- 1 Mango, diced
- 2 Avocados, diced
- 2 Tomatoes, diced
- 1 Cucumber, diced
- 1 Lime, squeezed
- 1 tbsp Garlic, minced

- Combine ingredients in a large bowl and toss.

Ingredients
- 5 Tomatoes, diced
- ¼ Yellow Onion, diced
- ¼ cup Cilantro
- 2½ tbsp Lime juice
- 2 Garlic, minced
- ½ Jalepeno, minced
Instructions
- Dice and mince your tomatoes, onion, cilantro, garlic and jalepeno.
- Add them to a bowl with your freshly squeezed lime juice and salt to taste.
- Let it rest in the fridge overnight for a deeper flavor.
Guac is a staple at my taco nights. This homemade guac is fresh, easy, and tastes great on almost everything.

Ingredients
- 3 Avocados, mashed
- ½ Onion, chopped
- ½ cup Cilantro, chopped
- 2 tbsp Lime Juice
- Salt and Pepper, to taste
Instructions
- Open avocados and scoop out the flesh.
- Mash the flesh with a fork.
- Stir in the other ingredeints. Enjoy!
