A refreshing, fun, and healthy way to cool off this summer… Vegan Watermelon Strawberry Pops.

Welcome to your new favorite summer treat. These watermelon pops are just four ingredients, so fun to make and help you counter the summer heatwave.

After seeing the non-vegan version of this recipe on channel foods, I knew I had to veganize it.

You can make these vegan watermelon strawberry pops in less than 10 minutes (not including freezing time), and all you need is a knife and a blender. That’s right, you don’t even need popsicle molds.

Plus, the whole family will love these pops, and you can feel good about serving them something packed with fruit and whole-food ingredients.

Make sure to share this recipe for these delicious pops with your favorite watermelon lover.

Why You’ll Love This Recipe

  • Minimal ingredients: These pops are made with only four plant-based ingredients.
  • Refreshingly delicious: These pops are perfect for a hot summer day. They’ll cool you right off in the best way possible.
  • No popsicle molds are needed: We’re re-using the watermelon rind for this recipe, so no need to buy any molds.

How To Make This Recipe

First, slice a watermelon in half, and then make an even slice to achieve a circular piece for the base of your popsicles.

Then, using a small knife, carve out the center watermelon rind from the circular piece and carefully remove the outer skin. Set aside the outer skin for later.

Place the remaining watermelon, 1 1/2 cups of frozen strawberries, and 1 cup of coconut yogurt in a blender. Combine until smooth.

Place the outer edge of your melon on a parchment paper-lined baking sheet (and make sure you have room for it in your freezer).

Using a knife, cut slits in the side of the rind for popsicle sticks and place them evenly around. I use four.

Carefully pour the watermelon strawberry mixture in the center, and top with blueberries.

Freeze overnight, slice, and enjoy!
