I’ll admit it; I might have gone a little cookie crazy this year. But now that the holiday season is here, I rounded up all of my favorite vegan cookie recipes so you can celebrate with satisfaction. 

These cookie recipes are perfect for a night in with a warm mug of hot cocoa binge-watching Christmas movies or for a night out with your friends and family singing “Joy to the World”. 

And a few of these cookie recipes are breakfast cookies so that you can indulge all day long.

The Recipe: Vegan Gingerbread Cookies

A simple, naturally gluten free and oil free gingerbread cookie recipe that takes less than half an hour start to finish.

Ingredients

  • 2 ¼ cups almond flour
  • 1 ½ tsp baking soda
  • ½ cup peanut butter, sub almond or wow butter
  • ½ cup coconut sugar
  • 1 tsp cinnamon
  • 1 tsp ginger
  • cup molasses
  • ¼ cup almond milk, sub oat or soy milk for nut free

Instructions 

  • Preheat the oven to 350F and line a baking sheet with parchment paper.
  • Combine your dry ingredients in a large bowl, including the flour, baking powder, ginger, cinnamon and coconut sugar.
  • In a separate bowl, combine the wet ingredients, including the milk, molasses and peanut butter.
  • Combine the wet ingredients with the dry ingredients until a smooth batter is formed. Separate into 8 to 12 cookies on the parchment lined baking sheet, and bake for approximately 15 to 20 minutes until firm. Allow to cool completely before eating.

Vegan Hot Chocolate Cookies 

If you are a chocolate lover, nothing hits the spot better than these Hot Chocolate Cookies. These cookies are a nice twist on traditional Christmas cookies, so they are perfect for sharing with your close family and friends.

The Recipe: Vegan Hot Chocolate Cookies

A gluten free and vegan hot chocolate cookie recipe that is easy to make and sinfully delicious!

Ingredients

  • 1 ½ cups oat flour
  • ½ cup cocoa powder
  • ¼ cup coconut sugar
  • ¼ tsp baking soda
  • 1 ½ tsp baking powder
  • 1 tbsp cornstarch
  • cup maple syrup
  • 1 tsp vanilla extract
  • ½ cup unsweetened almond milk
  • ½ cup dark chocolate chips
  • 1 cup vegan mini marshmallows

Instructions 

  • Preheat the oven to 350F and line a baking sheet with a silicone baking mat or parchment paper.
  • Combine wet ingredients apart from the marshmallows and chocolate chips in a bowl until smooth. Combine dry ingredients in a separate bowl. Combine the wet ingredients with the dry ingredients until a thick batter is formed. Sift in the chocolate chips and marshmallows.
  • Separate into approximately 8 to 10 cookies and bake for 12 to 15 minutes until cooked through. The cookies will be soft. Allow them to cool completely before eating!

Taylor Swift’s Chai Tea Eggnog Cookies Veganized 

Chai tea and eggnog in one cookie… can you get any more wintery vibes than that? These cookies are a vegan remix of Taylor Swift’s original cookies that she shared a few years back. They are best enjoyed by a crackling fire with Folklore playing in the background. 

The Recipe: Taylor Swift’s Chai Tea Eggnog Cookies (Veganized)

A delicious warm chia tea almond flour cookies with an eggnog frosting to ring in the holiday season!

Ingredients

  • 2 cup almond flour
  • cup coconut sugar, sub brown sugar
  • 1 tsp baking powder
  • 1 chai tea bag, cut open
  • 1 tsp vanilla extract
  • ¼ cup unsweetened cashew milk, sub almond or soy
  • ¼ cup almond butter
  • 2 tbsp vegan eggnog

Instructions 

  • Preheat the oven to 350F and line a baking sheet with parchment paper.
  • Add almond flour, coconut sugar, baking powder, contents of a chai tea bag and salt to a bowl and mix well. Pour in the cashew milk and vanilla extract and mix until a batter is formed.
  • Using your hands, roll the cookies into small dough balls that are approximately 2 tablespoons each. You should have enough dough for approximately 9 cookies. Once they are on the baking sheet, flatten them with your palm or a fork. Place in the oven for 22 minutes until cooked through. Meanwhile, prepare the icing by mixing the almond butter with vegan eggnog if desired.
  • Once cookies have baked, allow to cool for at least 15 minutes before icing.

Taylor Swift’s Pumpkin Chocolate Chip Cookies Veganized

If you are still on a pumpkin kick like me,  these pumpkin chocolate chip cookies are delicious. Inspired by Taylor Swift’s Cookies, I made a vegan recipe that packs the perfect amount of pumpkin so you can practically taste winter in each of your cookies.

Ingredients

  • 2 cups oat flour
  • 1 cup pumpkin puree
  • ½ cup maple syrup
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • 1 tsp pumpkin pie spice
  • ¼ tsp ground nutmeg
  • 1 ½ tsp baking powder
  • 1 cup dark chocolate chips
  • 1 pinch sea salt

Instructions 

  • Preheat the oven to 350F and line a baking sheet with parchment paper.
  • In a bowl, combine the wet ingredients, including the pumpkin, syrup and vanilla extract.
  • In another bowl, add the flour, spices, baking powder and salt and whisk well. Add the wet ingredients to the dry ingredients and fold in the chocolate chips.
  • Using a cookie scooper create 12 cookies (approximately 2 tablespoons of batter each) and place them 2 inches apart. Bake for 15 minutes as desired.

Notes

This is a cakey cookie. If you don’t like soft cookies, this is not the recipe for you.

  • ¾ Cup Rolled Oats
  • ¾ Cup Whole Wheat Flour
  • ¾ Tsp Baking Powder
  • ½ Cup Date Paste, Sub maple syrup or honey

  • Using an ice cream scooper or your hands, seperate the batter into 12 cookie shapes on the parchment paper. Press down the batter with a fork to flatten.
  • Bake at 375F for 12-15 minutes. Store covered in the fridge for up to five days.
